Yogurt Cheese Zoodle Bowl
1 medium, spiralized zucchini
100g yogurt cheese
50g, cooked pasta
100g, cooked and sliced chicken breast
1/2, thinly sliced bell peppers
1/4 teaspoon red chili flakes
2 tablespoons, chopped cilantro
1, juiced lime
2 tablespoons coconut milk
Spiralize the zucchini, cook the pasta according to package instructions, cook and slice the chicken breast, and thinly slice the bell peppers. Chop the cilantro.
In a small bowl, combine the coconut milk, lime juice, and red chili flakes. Mix well to create a zesty dressing.
In a serving bowl, layer the zucchini noodles, cooked pasta, sliced chicken breast, and bell peppers. Drizzle the coconut lime dressing on top. Add dollops of yogurt cheese and sprinkle with chopped cilantro.
