Beef Broccoli Stir-Fry with Ginger Rice
1 cup florets broccoli
100g, thinly sliced beef
2 tablespoons soy sauce
1 tablespoon, minced ginger
1/2 cup, uncooked rice
2 cloves, minced garlic
2, chopped green onions
1/2 cup, sliced bell peppers
1/2 cup, julienned carrots
1 tablespoon sesame oil
Cook the rice according to package instructions. Once cooked, stir in the minced ginger and chopped green onions. Keep warm.
In a bowl, combine the thinly sliced beef with soy sauce and minced garlic. Let it marinate for 10 minutes.
Heat sesame oil in a pan over medium-high heat. Add bell peppers, carrots, and broccoli florets. Stir-fry for 3-4 minutes until slightly tender. Remove from pan and set aside.
In the same pan, add the marinated beef. Stir-fry for 2-3 minutes until cooked through.
Return the vegetables to the pan with the beef. Stir in any remaining marinade and cook for an additional minute. Serve the beef and vegetable stir-fry over the ginger-infused rice.
For an extra kick of flavor, you can add a sprinkle of red pepper flakes or a drizzle of sriracha sauce to the stir-fry. To make it a complete meal, consider adding a side of steamed edamame or a refreshing cucumber salad.
