Beef Tenderloin Udon with Mixed Vegetables
200g beef tenderloin
1 large, sliced carrot
1 red, sliced bell peppers
1 cup snow peas
200g udon noodles
4 cups beef broth
2 tbsp soy sauce
3 cloves, minced garlic
1 tbsp, grated ginger
2, chopped green onions
1 tbsp sesame oil
Slice the beef tenderloin into thin strips. Slice the carrot, bell peppers, and chop the snow peas. Mince the garlic, grate the ginger, and chop the green onions.
In a large pot, heat sesame oil over medium-high heat. Add the beef strips and sear until browned. Add minced garlic and grated ginger, sauté for 1-2 minutes until fragrant.
Pour in the beef broth and soy sauce. Bring to a simmer. Add sliced carrots, bell peppers, and snow peas. Let simmer for 10 minutes until vegetables are tender.
In a separate pot, cook udon noodles according to package instructions. Drain and set aside.
Add the cooked udon noodles to the beef and vegetable broth. Stir in chopped green onions. Taste and adjust seasoning if needed. Serve hot and enjoy!
