Broccoli and Mushroom Quiche with Mixed Green Salad
1 cup, chopped broccoli
1 cup, sliced mushrooms
3 eggs
1/2 cup milk
1/2 cup, shredded cheddar cheese
1, store-bought or homemade pie crust
2 cups mixed greens
1, sliced tomato
2 tbsp balsamic vinegar
2 tbsp olive oil
In a skillet, sauté the chopped broccoli and sliced mushrooms until slightly softened. In a mixing bowl, whisk together eggs and milk. Stir in the sautéed vegetables and shredded cheddar cheese.
Preheat the oven to 180°C (350°F). Place the pie crust in a pie dish. Pour the quiche filling into the crust. Bake for 30-35 minutes or until the filling is set and the crust is golden brown.
In a salad bowl, combine the mixed greens and sliced tomatoes. Drizzle with olive oil and balsamic vinegar. Toss gently to coat.
