Cajun Chicken and Peppers Pasta Skillet
1 cup penne pasta
1, thinly sliced red bell pepper
1 can, diced green chiles
1, boneless and skinless, cut into bite-sized pieces chicken breasts
2 tablespoons cajun seasoning
2, thinly sliced bell peppers
2 stalks, chopped celery
1 cup chicken broth
1 can, diced canned tomatoes
2, chopped scallions
1 teaspoon paprika
1 teaspoon thyme
Slice the red bell pepper, green chiles, and bell peppers. Chop the celery and scallions. Cut the chicken breasts into bite-sized pieces.
In a large skillet over medium heat, cook the chicken pieces until browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
In the same skillet, add the sliced bell peppers, red bell pepper, green chiles, celery, and scallions. Cook for 5 minutes until the vegetables are slightly tender.
Stir in the Cajun seasoning, paprika, and thyme. Add the canned tomatoes and chicken broth. Bring to a simmer.
Add the penne pasta to the skillet and stir to combine. Cover and let it simmer for about 15-20 minutes, or until the pasta is cooked al dente.
Return the cooked chicken to the skillet and mix well with the pasta and vegetables. Cook for an additional 5 minutes to heat through.
