Chili Lime Sweet Potato Tacos with Feta
1 medium, diced sweet potatoes
1, finely chopped chili pepper
1, grated carrot
1 stalk, chopped celery
2 tbsp, crumbled feta cheese
2 tortillas
1/2 cup, cooked black beans
1, juiced lime
2 tbsp, chopped cilantro
1/4 cup, shredded red cabbage
2 tbsp greek yogurt
1/2 tsp cumin
In a large skillet, heat some olive oil over medium heat. Add the diced sweet potatoes, chili pepper, carrot, and celery. Season with cumin, salt, and pepper. Cook for about 15-20 minutes until the sweet potatoes are tender.
