Creamy Garlic Parmesan Potato Casserole
3 medium-sized, thinly sliced potatoes
1 cup cooking cream
1/2 cup, grated parmesan
3 cloves, minced garlic
2 tablespoons butter
1/2 cup milk
1 small, finely diced onion
1 teaspoon, fresh or dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
Preheat the oven to 180°C (350°F). Grease a baking dish with butter to prevent sticking.
In a saucepan, melt butter over medium heat. Add minced garlic and diced onion, sauté until fragrant. Stir in cooking cream, milk, Parmesan cheese, thyme, salt, and black pepper. Cook for 5 minutes until the sauce thickens.
Arrange a layer of thinly sliced potatoes in the greased baking dish. Pour a portion of the creamy sauce over the potatoes. Repeat the layers until all potatoes and sauce are used up.
Cover the baking dish with foil and bake in the preheated oven for 30 minutes. Remove the foil and bake for an additional 10-15 minutes until the top is golden brown and the potatoes are tender.
Once baked, let the casserole rest for a few minutes before serving. Garnish with additional Parmesan cheese and fresh thyme leaves. Serve hot as a delicious and comforting lunch dish.
