French Potato Galette with Herbed Goat Cheese Salad
2 medium-sized, thinly sliced potatoes
50g, crumbled goat cheese
2 cups mixed salad greens
2 tbsp, chopped fresh herbs (such as parsley, chives, and dill)
1, juiced lemon
3 tbsp olive oil
to taste salt
to taste black pepper
Preheat the oven to 200°C. Arrange the thinly sliced potatoes in a circular pattern on a baking sheet lined with parchment paper. Drizzle with olive oil, season with salt and black pepper. Bake for 20 minutes or until the potatoes are crispy and golden brown.
In a mixing bowl, combine the mixed salad greens, chopped fresh herbs, crumbled goat cheese, lemon juice, olive oil, salt, and black pepper. Toss gently until well combined.
