French Potato Galette with Herbed Goat Cheese Salad
2 large, thinly sliced potatoes
50g, crumbled goat cheese
2 cups mixed salad greens
2 tbsp, finely chopped fresh herbs (such as parsley, chives, and dill)
1, juiced lemon
3 tbsp olive oil
to taste salt
to taste black pepper
Preheat the oven to 200°C. Arrange the thinly sliced potatoes in a circular pattern on a baking sheet lined with parchment paper. Drizzle with 2 tbsp of olive oil, sprinkle with salt, pepper, and half of the chopped herbs. Bake for 20 minutes until the potatoes are crispy and golden.
In a mixing bowl, toss the mixed salad greens with the remaining chopped herbs, crumbled goat cheese, lemon juice, 1 tbsp olive oil, salt, and pepper. Mix well to combine all the flavors.
Place the cooked potato galette on a serving plate. Serve it alongside the herbed goat cheese salad. Garnish with additional fresh herbs if desired.
For a twist, you can add caramelized onions or roasted cherry tomatoes to the galette before baking. Alternatively, you can try different types of goat cheese for varied flavor profiles.
