Grilled Asparagus and Feta Salad
6 spears asparagus
50g feta cheese
1/2 cup cherry tomatoes
1/4, thinly sliced red onion
2 cups mixed greens
2 tbsp balsamic vinegar
2 tbsp olive oil
to taste salt
to taste black pepper
Preheat a grill pan over medium-high heat. Toss asparagus spears with 1 tbsp of olive oil, salt, and black pepper. Grill for 2-3 minutes per side until tender with grill marks. Remove from heat and let cool slightly.
In a large bowl, combine mixed greens, cherry tomatoes, red onion slices, and crumbled Feta cheese. Cut the grilled asparagus into bite-sized pieces and add to the bowl.
In a small bowl, whisk together 1 tbsp of olive oil, balsamic vinegar, salt, and black pepper until well combined. Drizzle the dressing over the salad and toss gently to coat.
Garnish the salad with an extra sprinkle of crumbled Feta cheese and freshly ground black pepper. Serve the salad immediately as a light and delicious meal.
For added crunch and nuttiness, consider sprinkling some toasted pine nuts or almonds over the salad before serving. You can also customize the salad by adding grilled chicken or shrimp for a protein boost.
