Mediterranean Halibut Delight
1 fillet (150g) halibut
5 pieces, sliced olives
1 medium, diced tomatoes
2 cloves, minced garlic
1/2, juiced lemon
1 tablespoon capers
1/4, thinly sliced red onion
2 tablespoons, chopped fresh parsley
2 tablespoons olive oil
Prepare all the ingredients: slice the olives, dice the tomatoes, mince the garlic, juice the lemon, slice the red onion, and chop the fresh parsley.
Place the halibut fillet in a shallow dish. Season with salt, pepper, and a drizzle of olive oil. Add the minced garlic and lemon juice. Let it marinate for 15 minutes.
Heat a pan over medium heat. Add a bit of olive oil. Sear the marinated halibut for 4-5 minutes per side or until cooked through.
Place the cooked halibut on a serving plate. Top it with sliced olives, diced tomatoes, capers, red onion, and fresh parsley.
Drizzle some extra olive oil over the dish before serving. Garnish with additional parsley leaves. Serve the Mediterranean Halibut Delight hot and enjoy!
For a variation, you can add some feta cheese crumbles on top of the halibut before serving for an extra burst of flavor and creaminess.
