Orange Glazed Duck Breast with Sweet Potato Salad
2 duck breasts
2 medium-sized, diced sweet potatoes
1/2 cup orange juice
2 tablespoons soy sauce
2 tablespoons honey
1 cup arugula
1/4 cup, chopped pecans
1/4 cup, crumbled feta cheese
Score the duck breasts' skin in a crisscross pattern. Season with salt and pepper. In a hot skillet, cook the duck breasts skin-side down for 6-8 minutes until the skin is crispy. Flip and cook for another 3-4 minutes. Set aside.
In a small saucepan, combine orange juice, soy sauce, and honey. Simmer over low heat for 5-7 minutes until the glaze thickens. Brush the glaze over the cooked duck breasts.
Boil the diced sweet potatoes until tender. Drain and let cool. In a bowl, mix the sweet potatoes with arugula, pecans, and feta cheese. Drizzle with olive oil and season with salt and pepper.
Slice the glazed duck breasts and serve them alongside the sweet potato salad. Garnish with additional pecans and feta cheese. Enjoy the vibrant flavors and textures of this delicious dish!
For a twist, you can substitute the duck breasts with chicken or turkey for a different flavor profile. Additionally, you can add a sprinkle of orange zest over the finished dish for an extra burst of citrusy flavor.
