Savory Honey Ginger Chicken Stir-Fry
1 boneless, skinless chicken breast, thinly sliced chicken breasts
2 tablespoons soy sauce
1 tablespoon, minced ginger
2 tablespoons honey
1/2 cup, cooked rice
2 cloves, minced garlic
1/2 cup, thinly sliced bell peppers
1/2 cup, thinly sliced onion
1/2 cup, cut into florets broccoli
1/2 cup, thinly sliced carrots
1 teaspoon, for thickening the sauce cornstarch
In a bowl, combine the sliced chicken breast with soy sauce, minced ginger, and honey. Let it marinate for at least 15 minutes to allow the flavors to infuse.
In a small bowl, mix together soy sauce, honey, minced garlic, and cornstarch. This will be used as the stir-fry sauce later.
Heat a wok or large skillet over medium-high heat. Add a bit of oil, then stir-fry the sliced bell peppers, onion, broccoli, and carrots until they are slightly tender but still crisp. Remove the vegetables from the pan and set aside.
In the same pan, cook the marinated chicken until it is fully cooked and slightly caramelized. This should take about 5-7 minutes.
Return the cooked vegetables to the pan with the chicken. Pour the prepared sauce over the chicken and vegetables. Stir everything together and cook for an additional 2-3 minutes until the sauce thickens and coats the ingredients evenly.
