Spiced Lentil Coconut Curry
1/2 cup rice
1 cup coconut milk
1/2 cup red lentils
1 medium, diced carrots
1/2, diced bell peppers
1 small, chopped onion
2 cloves, minced garlic
1-inch piece, grated ginger
1 tsp curry powder
1/2 tsp garam masala
2 tbsp, chopped cilantro
In a large pot, combine red lentils with water and bring to a boil. Reduce heat and simmer for 15-20 minutes until lentils are tender. Drain any excess water and set aside.
In a separate pan, heat oil over medium heat. Add chopped onions, garlic, and ginger. Sauté until onions are translucent. Add diced carrots and bell peppers, and cook until slightly softened.
Stir in curry powder and garam masala, and cook for another minute to toast the spices. Pour in coconut milk and cooked red lentils. Simmer for 10-15 minutes to allow flavors to meld.
