Spicy Beef Tacos with Roasted Corn Salsa
150g beef
2 pieces tortillas
1/4 cup, diced red onion
1 tsp cumin
1 tsp paprika
2 cloves, minced garlic
1/4 cup, drained and rinsed black beans
1/2 cup, roasted corn
1/4 cup, halved cherry tomatoes
2 tbsp, chopped cilantro
1, juiced lime
2 tbsp sour cream
In a bowl, combine the beef with cumin, paprika, minced garlic, salt, and pepper. Let it marinate for at least 15 minutes to allow the flavors to meld.
Preheat the oven to 200°C. Toss the corn with a drizzle of olive oil, salt, and pepper. Roast in the oven for 15-20 minutes until slightly charred.
In a skillet over medium-high heat, cook the marinated beef until browned and cooked through, about 5-7 minutes. Set aside.
In a bowl, combine the roasted corn, diced red onion, halved cherry tomatoes, chopped cilantro, and lime juice. Season with salt and pepper to taste.
Warm the tortillas in a dry skillet. Fill each tortilla with the cooked beef, black beans, and roasted corn salsa. Top with a dollop of sour cream.
