Spicy Lemongrass BBQ Chicken
2 boneless, skinless chicken thighs
2 stalks, minced lemongrass
3 cloves, minced garlic
3 tablespoons soy sauce
2 tablespoons honey
1 tablespoon sesame oil
1 tablespoon chili paste
1 tablespoon, grated ginger
2 tablespoons rice vinegar
2 tablespoons, chopped cilantro
2, chopped scallions
1/2 teaspoon salt
1/4 teaspoon pepper
In a bowl, combine minced lemongrass, garlic, soy sauce, honey, sesame oil, chili paste, grated ginger, rice vinegar, chopped cilantro, chopped scallions, salt, and pepper. Mix well to create a flavorful marinade.
Place the chicken thighs in a resealable bag or shallow dish. Pour the prepared marinade over the chicken, ensuring it is fully coated. Marinate in the refrigerator for at least 30 minutes, or ideally overnight for maximum flavor infusion.
Preheat the grill to medium-high heat. Remove the chicken from the marinade and grill for 6-7 minutes per side, or until the chicken is cooked through and has beautiful grill marks. Baste the chicken with the leftover marinade while grilling for extra flavor.
